Yellowtail (Amberjack) is a species of marine ray-finned fish of the family Carangidae. This fish is characterized by an elongated and slightly compressed body on both sides. Its gray-blue coloration, as well as the presence of a brown stripe running through the entire body, are its signature features. The amberjack meat is considered to be very valuable and delicate. It contains the most important minerals — magnesium, calcium, zinc, selenium, iron, and sodium, as well as vitamins A, C, K, PP, and B vitamins.
