The American plaice is a bottom fish of the flatfish family. The horizontally flattened body has an elongated oval shape with eyes located on one side, usually on the right side. A peculiarity of the American plaice is the ability to change color from black to light sandy, while the belly always remains white. In cooking, the American plaice is mainly used for cold smoking or curing. This fish contains a sufficient amount of iodine, phosphorus and natural proteins, which are perfectly and almost completely digested by the human body
